I’ve been having a fair few brioche french toasts of late. What comes to mind - the one at Le Miel et la Lune, the pain perdu at both Breakfast Thieves & Madame Sousou. This one drizzled with rich caramel from the apples and fragrant creamy mascarpone with flecks of vanilla bean.

To celebrate the patron saint of pastry chefs on St Honore’s Day May 16th, for a limited time only, those flaky layers of choux with three textures of raspberry - fresh, fresh chantilly & compote. For those craving a darker decadent bite, their chocolate tarts are amazing. Equally divine, the airy peanut butter mousse, salted caramel, delicious pops of peanut crunch with a pecan brownie at the base.
